Today I’m showing you guys how to make the best and easiest madelines. Don’t be intimidated about making these, I promise this recipe is so easy, that you’ll be wondering why you haven’t made them before. A good french madeline is a cookie, with the texture of a dense cake.
You can make these madelines three different ways. You can make them plain, lemon, or orange flavor. I hadn’t tried adding orange zest to the batter, so I made them with an orange glaze. Here is the recipe for if you want to do a glaze:
- 1 cup of powdered sugar + 2 teaspoons of lemon juice + 1 tablespoon of orange juice.
You do not have to rest, or ‘ribbon’ this batter for this recipe. No fancy chilling or whisking, making these will remind you of making a classic cake batter. Even though this recipe is easy, here are some tips on getting flawless madelines.
- Do not over mix your batter. This is important, because you don’t want dense madelines. They should be plush and moist, just slightly denser than a cupcake.
- Cool your butter completely. If you don’t, it will melt your sugar and give these cookies a strange texture, and a runny batter.
- 10 tablespoons of butter, melted and completely cooled
- 2 eggs, room temperature
- 1/2 cup + 3 tablespoons of sugar
- 2 tablespoons of brown sugar
- 1/2 tablespoon of vanilla
- 1 1/4 cup of flour
- 1/2 teaspoon of lemon zest (add 1 1/2 teaspoons more for lemon flavor!)
- Preheat your oven to 375 degrees F
- Generously grease your madeline pan with a mixture of melted butter and flour (1 1/2 tablespoons of melted butter mixed with 1 1/2 teaspoon of flour).
- In a large bowl, whisk together your eggs, sugars, vanilla, and lemon zest, until combined. Add the flour in 4 additions, gently folding after each.
- Add the melted butter and slowly stir until combined, but do NOT over mix.
- Add 1 1/2 tablespoons of batter to each madeline cavity. Bake for 7-9 minutes or until there are golden brown edges.
- Dip in your preferred glaze, or enjoy plain!
