3 ingredient peanut butter cookies [SO easy]

I originally shared a recipe for this when I first started my blog, but I decided to fix up the recipe a bit, with new photos and instructions πŸ™‚ These cookies are extremely easy (in fact they are too easy), perfect for anyone to make, and are little bits of chewy perfection. Easily fix your peanut butter cravings with this recipe!

Now the only ingredients you will need are…

Peanut butter- Of course this is necessary for peanut butter cookies. I even feel silly writing that. Not only is it the main staple, but without it this is just baked sugar and egg, which does not sound appetizing.

Sugar- This is for sweetness, but it is also necessary to create a crunchy texture, while keeping the cookies moist and chewy.

Egg- Don’t worry, it is just one egg. To bind these cookies together, you need this.

Optional add-ins– This recipe is three ingredients, but feel free to add in chocolate chips, vanilla extract, etc (anything you really want!)

Some key points:

  • Pressing down with the fork is important! It helps to cook the cookies evenly, and gives it the best shape. It is also beautiful!
  • I got a question on my previous post of this if you can use almond butter. I ultimately decided it would work, but then after actually trying it I do not recommend it. Almond butter is generally more liquidy. The cookies were good, they were just very soft and did not hold their shape well. However, speculaas butter does work!
  • This recipe only makes 12 standard sized cookies!

Ingredients:

  • 1 cup of peanut butter (do not melt)
  • 3/4 cup of sugar (you can use 1 cup for a more crunchy cookie, but I prefer this.)
  • 1 large egg
  1. Preheat your oven to 350 F, and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the peanut butter, sugar, and egg. I usually use a fork, which works best.
  3. Chill the dough for 15 minutes. This is optional, but recommended so you don’t have too much of a sticky dough.
  4. Roll out into 1.5-2 tablespoon sized balls. Space at least 2 inches apart on the tray.
  5. Bake for 10-12 minutes, or until light brown edges appear.
  6. Enjoy!
