Lofthouse Sugar Cookie Recipe [Copycat]

Today I will be sharing how to make these delicious Lofthouse sugar cookies. I originally posted this recipe last year, but I recently made a few changes to the original recipe! I’m excited to share my new recipe today, I made them so they are softer, spread more evenly, and taste different (I used cake flour)!

If you’ve never had a Lofthouse sugar cookie before, I beg you to try one! They are very soft sugar cookies (almost like cake) topped with a sweet frosting. It may not sound good but once you take one bite, you’ll be addicted – they practically melt in your mouth.

For the cookies:

½ cup of unsalted butter
¾ cup + 1 tbsp white sugar
2 egg whites
⅓ cup sour cream
1 tsp vanilla extract
⅛ tsp almond extract
1 ½ tbsp cornstarch
1 ¾ cup cake flour
½ teaspoon baking powder
½ teaspoon of baking soda
¼ tsp salt
¼ tsp cream of tar tar
1 1/2 tbsp milk + ¼ teaspoon vinegar, mixed

For the Frosting:

6 tbsp butter, softened
½ tsp vanilla extract
2 cups powdered sugar
2 tbsp milk
Optional toppings: Sprinkles, chocolate chips, etc.

For the cookies:

1. Preheat oven to 350 degrees F and line a baking tray with parchment paper.
In a medium bowl, whisk together the cake flour, cornstarch, baking powder, baking soda, salt, and cream of tar tar until combined.

2. In a bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl with an electric mixer, beat the butter and sugar until light and fluffy, around two minutes.
Add the egg whites one at a time until incorporated. Beat in the extracts and sour cream until well combined.

3. Add half the flour mixture and beat on low speed until combined. Add the milk and vinegar mixture alternately, and add the rest of the flour. Do not overmix.
Optional chill the dough for 30 minutes. Spoon balls around 2 tablespoons onto the baking tray.

4. Bake for 10-12 minutes or until edges are golden brown.

For the frosting:

  1. In a bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, beat the butter until it is pale and fluffy, about 2 minutes. Add the powdered sugar, vanilla, and milk and beat until combined. Carefully frost the cooled cookies and top with optional sprinkles.
  2. Enjoy!
